Week 2 Recap of State-to-Plate at Central Montco Technical High School!

Exploring American Flavors in State-to-Plate

The second week of our Summer Cooking Camp at Central Montco Technical High School was a flavorful exploration of American cuisine. Our State-to-Plate theme took our junior chefs on a culinary journey across the country, discovering the regional flavors and techniques that define American cooking. With guidance from our culinary instructors, Chef Lindsay and Chef Dayvon, and a special guest appearance by Chef Charles (Chip), our junior chefs delved into a week of delicious dishes and culinary traditions.

Monday: Tater Tot Hotdish & Boston Cream Cupcakes

The week started with a hearty Midwest favorite, Tater Tot Hotdish, under the expert guidance of Chef Lindsay. Our junior chefs learned the art of layering flavors in this comforting casserole, combining ground beef, vegetables, and crispy tater tots. In the afternoon, Chef Dayvon introduced them to the classic Boston Cream Cupcake, where they mastered baking soft, moist cupcakes filled with rich pastry cream and topped with chocolate ganache.

Tuesday: California Burrito with Fresh Pico de Gallo & New York Style Cheesecake Tart

Tuesday transported our junior chefs to the West Coast with a flavorful California Burrito, led by Chef Lindsay. They explored the fusion of ingredients like grilled chicken, fresh pico de gallo, and shoestring french fries, mastering the art of wrapping a perfect burrito. Chef Dayvon then guided them through creating a New York Style Cheesecake Tart, teaching the delicate process of achieving a creamy filling and a perfectly crisp crust.

  • Baking a cheesecake tart with a smooth, creamy consistency.

Wednesday: Juicy Shredded Dutch Oven Chicken with Carolina Gold BBQ Sauce & Beignets with Chocolate and Raspberry Sauce

Wednesday was a special day with Guest Chef Charles (Chip) from New York, who introduced our junior chefs to the rich flavors of Southern cuisine. They learned to prepare Juicy Shredded Dutch Oven Chicken, creating a flavorful Carolina Gold BBQ Sauce and a creamy coleslaw dressing. Chef Dayvon added a touch of New Orleans with Beignets, teaching the process of frying the perfect doughnut and pairing them with decadent Chocolate and Raspberry Sauces. The day also featured a demo of the new Ninja Creami, with everyone sampling refreshing Lemonade Gelato.

  • Preparing and frying beignet dough for a light, airy texture.

  • Creating complementary sauces for dipping and enjoying a new kitchen gadget.
