This week, our junior chefs at Create-a-Cook's Central Montco Technical High School location immersed themselves in the vibrant flavors and rich traditions of Southern Italian cuisine. Under the expert guidance of Chef Jarrett for culinary dishes and Chef Dayvon for baking and pastries, they crafted a variety of classic dishes, learning about the importance of fresh, whole foods and eco-friendly cooking.
Monday: Sicilian Rigatoni with Ricotta and Chocolate Chip Biscotti
We began the week with a delicious Sicilian Rigatoni with Ricotta, a hearty pasta dish that highlighted the use of fresh ingredients and traditional techniques. The junior chefs also baked Chocolate Chip Biscotti, mastering the art of creating these crunchy, flavorful Italian cookies.
Tuesday: Arancini and Focaccia Barese
Tuesday was all about classic Italian street food and bread. Our chefs crafted Arancini, crispy rice balls filled with savory goodness, and Focaccia Barese, a delicious Italian flatbread topped with fresh ingredients. Chef Jarrett guided them through each step, emphasizing the importance of technique and flavor balance.
Wednesday: Orecchiette with Broccoli Rabe and Sausage, Toasted Bread Crumbs, and Tiramisu
Midweek, our chefs tackled a traditional pasta dish: Orecchiette with Broccoli Rabe and Sausage, topped with Toasted Bread Crumbs for added texture and flavor. Thursday: Pizza Napoletana and Italian Ricotta and Pear Cake
