Celebrating Week Five of Create-a-Cook at Haverford College - Southern Italy

As we concluded the fifth week of Create-a-Cook at Haverford College, our junior chefs embarked on an exciting culinary adventure through Southern Italy. This week, titled "Southern Italy," focused on the bold and vibrant flavors that make Italian cuisine beloved worldwide. Under the expert guidance of Chef Carisa, our young chefs not only mastered iconic Italian dishes but also gained a deeper appreciation for Italy's rich culinary heritage.







Monday: Sicilian Rigatoni with Ricotta and Prepping Focaccia Barese


Our journey began with Sicilian Rigatoni with Ricotta. The creamy ricotta combined with the robust flavors of Sicily set the stage for an exciting week ahead. Additionally, our junior chefs prepared the dough for Focaccia Barese, a traditional bread known for its soft texture and delightful taste.


Tuesday: Arancini and Baking Focaccia Barese


On Tuesday, the focus was on creating Arancini, crispy rice balls with a deliciously savory filling. The previously prepped Focaccia Barese was baked to golden perfection, adding a wonderful accompaniment to the day’s dish.


Wednesday: Orecchiette with Broccoli Rabe and Sausage, Toasted Bread Crumbs, and Tender Italian Cookies


Wednesday brought the preparation of Orecchiette with Broccoli Rabe and Sausage. This classic Southern Italian pasta dish, enhanced with toasted bread crumbs, showcased the importance of using high-quality, fresh ingredients. Tender Italian cookies provided a sweet finish to the day’s culinary efforts.


Thursday: Lasagna and Tiramisu


On Thursday, our junior chefs delved into making Lasagna, layering pasta with rich meat sauce and creamy cheese. For dessert, they crafted Tiramisu, an Italian favorite with layers of coffee-soaked ladyfingers, mascarpone cheese, and cocoa.


Friday: White and Milk Chocolate Truffles and Butter Cookies with Guest Baker Marlaina


The week culminated with our junior chefs creating decadent White and Milk Chocolate Truffles with Chef Carisa and then buttery, melt-in-your-mouth Butter Cookies with our Guest Baker Marlaina, owner of Marlaina's Masterpieces. Both celebrating the week’s achievements with these sweet treats.

Throughout the week, our emphasis was on more than just cooking; it was about experiencing the essence of Southern Italy’s culinary traditions. By working together, our junior chefs honed their teamwork and culinary skills, all while using fresh, high-quality ingredients. This hands-on approach fostered a deep appreciation for the rich heritage and irresistible charm of Italian cuisine.


As we reflect on this week at Haverford College, we're incredibly proud of our junior chefs. They not only developed their cooking skills but also embraced the culinary treasures of Southern Italy. We look forward to seeing their continued growth and culinary adventures!
